I made this easy tater tot casserole for brunch last weekend! Seriously, this is so simple and perfect to feed a crowd. Plus you can get it started and then get ready while it’s baking. That’s why I’m still in my lounge set in these pictures.
HOW TO MAKE A TATER TOT CASSEROLE

Ingredients:
-1 32oz package of frozen tater tots
-Bacon. You can use bacon bits, pre-cooked bacon or just regular bacon that you cook day of. Just crumble or cut it up.
-8 eggs
-2 cups of milk.
-2 cups of Monterey jack cheese.
-1 package of ranch mix.

Instructions:
-Preheat your oven to 350.
-First cook your bacon. I used precooked bacon to save time, so I just heated it up in the microwave and then cut it up.
-Then grease a 9×13 casserole pan.
-Empty a package of frozen tater tots in the bottom of the dish.
-Next, add bacon and Monterey jack cheese on top of the tater tots.
-Set the dish aside and whisk together eggs, milk and a package of ranch mix.
-Pour the whisked mixture over the tater tots.
-Top with shredded cheese and bake for an hour on 350. Enjoy!

Yep! You can prepare the casserole, cover it and store in the freezer or fridge before baking.
How about leftovers?
We had lots of leftovers so we got to enjoy this for a few days. Just scoop some out and heat up for a minute or so in the microwave. Tastes great. Feel free to add. a little extra cheese and serve with ranch.
Can I use different cheese?
Absolutely. I think this would taste great with cheddar, mozzarella, or honestly any hard shredded cheese. Get creative!
I’m a vegetarian, can I make this without the bacon?
Definitely! I think taking out the bacon and substituting mushrooms would taste awesome in this dish. Also, if you aren’t a vegetarian, but just don’t like bacon, I think you could definitely do sausage.
