I love an under-the-sea theme party! With the live-action Little Mermaid coming out this summer, mermaids are trending again. So these cute (and SUPER easy) clam cookies are perfect for a summer party or a “let’s shell-a-brate” party theme. Keep reading to see how I put these together.

To make these clam cookies, you’ll need nilla wafers, pink icing (store-bought is fine unless you are feeling ambitious and want to make your own), eyeball candies or pearl sprinkles or gumballs.
To put these together, add a thick layer of pink icing on the back of one Nilla wafer. I load it up at the front and thin it out near the back. Place another Nilla wafer on top making sure the back is slanted further down than the front.
Add either eyeball sprinkles or a large pearl to the front thick layer of icing. The eyeballs will look like they are peeking out of the shells.

You can totally use different color icing too! Purple and blue would be super on theme, I was just feeling pink. Also, I used this icing because it comes with different tips so you can get the pretty fluffy icing rather than it just being spread on the cookie.
