The Kentucky Derby is one of the most exciting events in the world of horse racing, and it’s also a time for social gatherings and parties. While there are many delicious food options to choose from, one classic dish that pairs well with a mint julep is horseshoe-shaped tea sandwiches with cream cheese spread and cucumbers.

These sandwiches are not only visually appealing with their horseshoe shape, but they are also incredibly delicious and easy to make. The whipped cream cheese spread gives the sandwiches a creamy and tangy flavor that perfectly complements the fresh and crisp taste of cucumbers.
To make these sandwiches, start by slicing cucumbers thinly and then cut the slices into fourths so you have a wedge shape. Set those aside. Next, take slices of bread and cut them into horseshoe shapes using a cookie cutter. This cookie cutter is technically a rainbow, but I liked that the arch was thicker so you can add more sandwich filling. Spread the whipped cream cheese spread onto each slice of bread. I always used the whipped cream cheese spread from the store because it’s SO much easier to spread than from a block of cream cheese. and then top with a few slices of cucumber. Close your sandwich with the other slice of bread.
Not only are these sandwiches perfect for a Kentucky Derby party, but they’re also great for any spring or summer gathering. You can use different cookie cutters to get desired shapes. They’re easy to transport, easy to eat, and easy to make in large quantities. Plus, they’re a refreshing alternative to heavier party snacks like chips and dips.
If you want to take your horseshoe-shaped tea sandwiches to the next level, consider adding some additional ingredients like fresh herbs, thinly sliced radishes, or even smoked salmon. Whatever variation you choose, your guests will be sure to love these tasty and visually appealing sandwiches at your next party.
