It’s also the perfect dish to make if your kitchen is under construction like mine was when I made this dish. We had a barbecue that night, and our wall had been cut out of the kitchen and we had no oven. So I had to make something cold and easy to make. I borrowed my parents’ kitchen and threw this together.
This is definitely the most southern dish I’ve ever made because it had Fritos and mayonnaise, but it was a huge hit at the barbecue so I highly recommend it if you need to bring a side dish to a summer party. Keep reading to see how I put this together.

Ingredients:
-Two cans of drained whole-kernel corn
-Two cups of Mexican blend cheese
-One cup of light mayo (you can use regular mayo, but it made me feel better to use light.)
-One diced red pepper
-Pepper
-Cilantro
-Crushed Chili Cheese Fritos (You can use regular Fritos if you like, but these add a little kick!)
Instructions:
First, mix together two cans of drained whole-kernel corn, two cups of mexican blend cheese, one cup of light mayo, diced red pepper, pepper and a bit of cilantro in a bowl. Then, add crushed Chili Cheese Fritos and mix well. Serve and enjoy!
