How to make a chicken bacon ranch casserole
-Shredded chicken – I picked up a rotisserie chicken from the grocery store and that was the move. SO easy.
-1 cup ranch dressing
-Crumbled bacon – I went with pre-cooked bacon so I could just heat it up in the microwave. If you want to make this even easier, just use bacon bits.
-Prep your ingredients. Go ahead and shred your chicken, microwave your bacon and boil your broccoli. Because we won’t be baking this for very long, you’ll want cooked ingredients. If you get pre-cooked bacon and rotisserie chicken, the most difficult part of the prep is boiling broccoli. You could also prepare it over the stove or in the oven. However you like to cook your broccoli is fine.
-Combine shredded chicken, bacon, broccoli and one cup of ranch dressing in a casserole dish.
-Sprinkle pepper and garlic powder over the ingredients.
-Mix ingredients together with a wooden spoon.
-Top with shredded mozzarella and cheddar cheese.
-Bake at 375 degrees for 15 minutes.
Can you substitute the vegetables?
Absolutely. If you are feeling asparagus, green beans, cauliflower, spinach, mushrooms, tomatoes, or whatever, go with your gut and pick something you like. I like broccoli so I went that route.
Can you use chicken breast and cut it up?
For sure. You can use any chicken you like. I picked up a rotisserie for easy prep, but if you want to bake or fry your chicken that is totally fine. You could also use chicken tenders or nuggets if your kids like that.
Can you make this ahead of time?
Yep! You can assemble the whole thing, wrap it tightly with foil and store it in the fridge for a few days before you bake it. You can also freeze it, but definitely let it thaw in the fridge before you bake it. If it’s already baked, store leftovers in the fridge for 3-5 days and heat them up in the microwave.
