Can you believe the 4th of July is this week? I feel like we were just talking about Christmas gift guides and here we are. This 4th of July is particularly special for me. My brother is home on leave for the first time in over a year! He is in the army and I am SO happy to have him home.
To prepare for his arrival this weekend, my sister created these beautiful red, white & blue pound cake cupcakes. I can take credit for nothing in this recipe. She created the whole thing and let me follow her around to take pictures and video. She also let me lick the beaters covered in icing. So yeah…you could say I was super helpful. These really are the perfect patriotic dessert for your party this weekend though!

These pound cake cupcakes are so light and airy for the summer holiday and pair perfectly with raspberries, strawberries, and blueberries. Who doesn’t love a patriotic-themed cupcake that doesn’t leave you begging for a nap?

Cupcakes:
-1.5 cups Swan’s Down Cake flour
-1.5 Tsp baking power
-2/3 cup sugar
-1 tsp vanilla extract
-1 tsp almond extract
-3 eggs large
-1/4 cup milk
-1/2 cup unsalted butter
Icing:
-4 cups powered sugar
-1 cup softened butter
-3 tsps. vanilla
-1-2 tbsp milk
-Blue food coloring
-Ziploc Bag
Topping:
-Raspberries
-Strawberries
-Blueberries
-Sprigs of mint
