Welp. I should probably start by saying that sometimes you have to do things by trial and error. This post is one of those times. As in, I almost burned my house down trying to get this recipe the way I wanted it. I DID get it together though and made some super tasty garlic, brie and fig crostinis.
This all started when I was at the Eco-Holiday Shopping Bazaar in Atlanta last week. I sampled some flavor olive oil pairings and fell head-over-heels in love with the garlic olive oil and black mission fig balsamic vinegar combination. I, of course, purchased the pair and really wanted to make something with it for a Christmas appetizer.
So let’s just dive right in.
To make these, you will need:
-Thinly sliced loaf of bread. I turned to Publix for help with this and just bought a pre-sliced loaf from the bakery.
-Butter
-Prosciutto
-Brie
-Parsley leaves
-Wax Paper
Step 1. Place the wax paper on a baking sheet. Y’all I make this step even easier. I have pre-cut wax paper because that’s just the kind of human being I am.
Step 2. Put the sliced bread on the wax paper. Again super easy.
Step 3. Now this is where it gets a smidge more difficult. We have to butter the bread, not a lot but enough to get it crispy.
Step 4. Ok this part is where I almost burned my house down so clearly this was difficult for me. But you have to broil the bread. At 1 minute, it was not even close to being done. At 2 minutes, I had smoke coming out of the oven. So it’s really ideal to watch the bread and a minute and thirty seconds is perfect if you are using my oven.
Step 5. Strategically place the prosciutto on the bread.
Step 6. Put slices of brie on top of the prosciutto. You may have to heat up the brie a little to get that soft tasty texture.
Step 7. Ok this the best part, drizzle the delicious combination of garlic oil and fig vinegar over the crostinis.
Step 8. Finally, sprinkle some parsley over all of it and you’re done!
I don’t like to toot my own horn, but these are realllllly good, and the fig flavor makes it totally Christmas-y. If you’ve seen my Instagram feed lately, you know I’m all about that Christmas life. These are great to take to a Christmas party as a fun appetizer.
