Did you guys watch the Masters last week? Hubb’s family is from Augusta so the Masters are a pretty big deal to them. Stephen used to work the Masters growing up and it’s almost like a cultural thing to people from Augusta.
He watches all week, but I watch Sunday when we actually have a winner. LOL… that’s just a lot of golf to try and watch on tv! We try to make a thing out of it and make the Masters’ Pimento Cheese and Egg Salad Sandwiches while we watch. If you don’t live with someone from Augusta, Pimento Cheese and Egg Salad sandwiches are a staple at the Masters.
Fun fact: Masters food is the cheapest in sports. These sandwiches are like $1.50 each and beer is $4. It’s nuts.
Obviously the Masters ended yesterday, but I thought I would still share the recipes today. Honestly these sandwiches are great for spring and summer so can be eaten any time not just during the Masters. They can also be turned into finger sandwiches for baby or wedding showers, any kind of afternoon tea, Kentucky Derby parties, whatever!
This is the official Masters recipe so I did NOT make these up these recipes and take no credit. I do partake in the eating though and thought it would be fun to share 🙂
Let’s start with Pimento Cheese!
Ingredients:
-3 cups shredded white cheddar cheese
-2 cups shredded yellow sharp cheddar cheese
-4 oz crumbled blue cheese
-1 cup shredded Parmesan cheese
-1 (4-oz) jar sliced pimentos, drained
-1 cup light mayo
-2 tbs Dijon mustard
-1 loaf of white bread
Combine cheeses, pimentos, mayo and mustard in a food processor and process until smooth. Cover and chill. Spread on bread slices.
Ok now for the Egg Salad.
Ingredients:
-6 large hard boiled eggs
-4 tablespoons mayo
-1 teaspoon white vinegar
-1 teaspoon yellow mustard
-1/2 teaspoon salt
-1/2 teaspoon finely grated vidalia onion
Peel eggs and place them in the food processor and pulse them a few times around do not over do it. In a medium bowl, mix mayo, vinegar, mustard, salt, and onion. Once this is mixed well, then add the chopped eggs and mix until just combined.
Serve with sweet tea or an Arnold Palmer. Yum!

OMG a egg salad is honestly one of my favorite easy lunch sandwiches but add in pimento! OK! I love it!
