Happy Friday! Whew, it’s been a week. I figured we could end this week with a fun yummy treat!
So if we’re getting real, I don’t like milk. I don’t feel good when I drink it, I don’t like the taste, just not my thing. However, I have discovered the most delicious alternative–So Delicious Organic Almondmilk With Cashews. Ok, I love this milk because it is dairy, soy, and gluten free. It has less than seven ingredients and still tastes delicious! Oh and to take it one step further, every bottle is recyclable and made up of 80% plants.
So yes! I can drink this without gagging, but also it can be used for baking! Say whatttt? In fact, I used So Delicious Almondmilk to make these vegan coconut chocolate chip muffins. Here is the recipe:
-1 cup flour
-3 tbsp. of brown sugar
-1 cup of So Delicious Vanilla Almondmilk
-1/2 cup of dairy-free chocolate chips
-2 tbsp. Almond Butter
-1 egg substitute
-Pinch of baking soda
-Pinch of salt
-Preheat oven to 400 degrees.
-In a standing mixer combine flour, brown sugar, So Delicious Vanilla AlmondMilk, almond butter, egg substitute, baking soda, and salt.
-After thoroughly mixed, add dairy-free chocolate chips.
-Grease a muffin tin or place cupcake liners in a muffin tin–I used liners.
-Fill cups 2/3 of the way full.
-Sprinkle coconut on top of batter-filled cups
-Bake muffins for 14-16 minutes
-Make sure the muffins are fully baked. I insert a toothpick, if it’s clean then I assume I’m good to go.
-Cool and enjoy!!
You can purchase So Delicious Almondmilk at your local Walmart! It’s very affordable and ibotta is giving you a $1 rebate. Hecks yeah! I’m so thankful I can drink milk again and it isn’t an awful experience. So Delicious comes in three flavors: Original, Vanilla, and Unsweetened. They all have less than 7 ingredients and are 50 calories or less per serving. Doesn’t get much better than that!
