Do you have a sweet tooth? I absolutely do. No lie, our apartment won best complex last week and rewarded us with a dozen cookies each. I ate mine in two days and really wasn’t even sorry…
However, there are healthier options to curb my sugar needs, like this low calorie frozen yogurt pie. I hopped on the fro-yo train in a big way a few years ago, and really haven’t jumped ship yet. Yes, I just mixed my transportation metaphors…
Anyways, this pie is less than 200 calories a slice and super easy to make. It takes less than 15 minutes to prep if you aren’t focused on taking pictures of your every move. Also, shout out to my hubby who took his first ever blog photos for this post… we have an Instagram husband in the making after all. He’s a gem.
Ok so for this pie, you will need:
-15ish graham crackers
-(2) 6oz containers of your favorite flavor of low calorie yogurt. I went with raspberry and because I’m cheap, it’s Kroger brand.
-3 tablespoons of butter
-2 cups of lite Cool Whip
-Fresh fruit. I bought raspberries to go with my raspberry yogurt. However, I saw they had cinnamon roll yogurt and that could be fun…
Instructions:
-Preheat your oven to 350 degrees.
-Place graham crackers in a Ziploc bag and crush into crumbs with a rolling pin. Or a hammer. Dealer’s choice.
-Combine crackers and three tablespoons of melted butter in a bowl and stir together.
-Press the crumbs and butter firmly into the bottom of an 8-in round baking pan.
-Bake for 10 minutes.
-Begin blending your Cool Whip with either a hand mixer or in a stand mixer. I used my KitchenAid and it worked perfectly.
-Fold in two containers of yogurt.
-Remove your pie crust from the oven and let cool.
-Once your yogurt and Cool Whip are blended, pour mixture over crust. Smooth with a spatula.
-Freeze pie for three hours.
-Allow pie to thaw in the refrigerator for 30 minutes before serving.
-Top with fresh fruit and crumbled graham cracker.
-Serve and enjoy! Seriously. One piece is less than 200 calories. You’re welcome!
