My wedding is less than six months away. SIX MONTHS! It’s crunch time. No more late night Taco Bell after a night out in the Highlands, no more “but calories don’t count on the weekend.” No more. I have six months to look the best I’ve ever looked in my whole life. That means I’m breaking out the heathy recipes.
One of my new favorite healthy recipes is this one for Garlic Cilantro Lime Shrimp Tacos. They’re so easy to make and SO yummy.
You will need:
-2 lbs of frozen, tail-off, deveined, peeled shrimp
-3 roma tomatos
-1/4 red onion
-1/2 English cucumber
-2 tsps of garlic
-Whole wheat mini tortillas
In a large skillet over medium heat, combine frozen shrimp and olive oil. Don’t let anything stick to the bottom and don’t over cook the shrimp. Add 2 tsp of garlic and cilantro. Continue to move everything around in the pan. Add garlic powder, salt and pepper to taste. Cover and leave the skillet over low heat to marinate and keep warm.
Peel, chop and combine avocados, tomatoes, cucumber, cilantro and 1/4 red onion in separate bowl. Cut a lemon in half and squeeze juice from both halves over the ingredients. Sprinkle olive oil, salt and pepper to taste. Mix thoroughly.
Drain shrimp in a collander and place in serving bowl. Cut a lime in half and squeeze juice from both halves over the shrimp.
Warm tortillas in the microwave for 7-10 seconds. Use a fork and stuff those tortillas as full as your little heart desires.
